Summer Watermelon Basil Feta Salad

When the temperatures rise and the days get longer, few foods are as refreshing as watermelon. Sweet, juicy, and incredibly hydrating, watermelon is one of summer's most beloved fruits—and for good reason. Watermelon Basil Feta Salad

Ingredients:

  • 1 small watermelon, cubed
  • feta cheese, crumbled
  • fresh basil leaves, torn or thinly sliced
  • basil oil
  • flaky salt
  • black pepper
  • optional: balsamic glaze or fresh lime juice

Instructions:

  1. Add watermelon to a large serving bowl or platter.
  2. Top with crumbled feta and torn basil leaves.
  3. Drizzle lightly with basil oil and finish with flaky salt and black pepper. 
  4. Add a little balsamic glaze or fresh lime juice if you want more lightness.
  5. Serve cold. ​​​​

Notes: 

  • best served cold
  • great with grilled chicken, shrimp, or salmon
  • fresh mint also works well
  • if making ahead, add basil right before serving
